- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1 apple, peeled and diced
- 1 tablespoon erythritol or preferred sweetener
- In a bowl, whisk together the eggs, almond flour, cocoa powder, almond milk, vanilla extract, cinnamon, and baking powder.
- Heat a non-stick skillet over medium heat and pour a small amount of batter to form a crêpe.
- Cook until bubbles form on the surface, then flip and cook the other side until golden.
- In another skillet, sauté the diced apple with erythritol and cinnamon until soft.
- Fill each crêpe with the warm apple mixture and fold.
- Serve warm with additional cinnamon on top.
