Delicious Greek cheese pies made with flaky phyllo pastry.

- 1 package phyllo dough
- 1 cup ricotta cheese
- 1 cup feta cheese, crumbled
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- 1/2 cup melted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the oven to 375°F (190°C).
- In a bowl, combine ricotta, feta, parsley, egg, salt, and pepper.
- Lay out one sheet of phyllo dough, brush with melted butter, and layer another sheet on top.
- Cut the phyllo into strips, place a spoonful of the cheese mixture at the end, and fold to form triangles.
- Place the triangles on a baking sheet and brush with more melted butter.
- Bake for 25-30 minutes or until golden brown.
Notes
- Serve warm for the best flavor.
- You can freeze before baking for later use.
