- 1 medium onion
- 6 eggs
- Salt to taste
- Olive oil for frying
- Peel and slice the potatoes thinly.
- Heat olive oil in a large frying pan and add the potatoes, cooking until tender.
- Add sliced onion and cook until soft.
- In a bowl, beat the eggs and season with salt.
- Once the potatoes and onions are cooked, drain excess oil and mix with the beaten eggs.
- Return the mixture to the pan and cook until the bottom is set.
- Flip the tortilla to cook the other side until golden brown.
- Serve warm or at room temperature.
