Serviettenknödel are a traditional German bread dumpling, often served with rich gravies or alongside meals.

Ingredients

Scale
  • 250 grams stale bread
  • 500 ml milk
  • 2 eggs
  • 1 small onion, finely chopped
  • 50 grams butter
  • salt to taste
  • black pepper to taste
  • fresh parsley to taste

Instructions

  1. Cut the stale bread into small cubes and place in a bowl.
  2. In a saucepan, heat the milk and pour it over the bread, then let it soak for about 10 minutes.
  3. Meanwhile, in a pan, melt butter and sauté the chopped onion until golden brown.
  4. Add the sautéed onions, eggs, salt, pepper, and parsley to the soaked bread and mix well.
  5. Form the mixture into a log shape and wrap in a clean kitchen towel.
  6. Boil a large pot of salted water and add the wrapped dumpling.
  7. Simmer for about 30 minutes, turning occasionally.
  8. Remove from water, unwrap, and slice to serve.

Notes

  • Serve with gravy or alongside meats for a traditional meal.
  • Can be made ahead of time and reheated.
