- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup mashed raspberries or strawberries
- In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, egg, and melted butter.
- Stir the wet ingredients into the dry ingredients until just combined.
- Gently fold in the mashed berries.
- Heat a skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface. Flip and cook until golden brown.
- Serve warm with additional berries and syrup if desired.
Notes
- For extra pink color, add a few drops of food coloring.
- These pancakes can be made gluten-free by using a gluten-free flour blend.
