- 4 cups chicken broth
- 2 packets instant ramen noodles
- 2 tbsp white miso paste
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 cup sliced green onions
- 1 cup shiitake mushrooms, sliced
- 2 boiled eggs
- 1 cup bok choy, chopped
- In a pot, heat the chicken broth over medium heat.
- Add miso paste, soy sauce, and sesame oil. Stir until the miso is dissolved.
- Bring the broth to a simmer and add the ramen noodles. Cook according to package instructions.
- During the last 2 minutes of cooking, add the bok choy and mushrooms.
- Serve the ramen in bowls topped with sliced green onions and a boiled egg.
Notes
- For a spicier version, add chili oil or pepper flakes.
