Lebkuchen Plätzchen are traditional German gingerbread cookies, often enjoyed during the festive season.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup honey
  • 3/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup chopped nuts (hazelnuts or almonds)
  • 1 cup candied citrus peel

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the honey and brown sugar until well combined.
  3. Add the egg and stir until smooth.
  4. In another bowl, mix the flour, baking powder, spices, and salt.
  5. Gradually add the dry ingredients into the wet mixture.
  6. Fold in the chopped nuts and candied citrus peel.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until lightly golden.
  9. Allow to cool completely before serving.

Notes

  • These cookies can be stored in an airtight container for up to a week.
  • For a chewy texture, do not overbake.
