- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup ricotta cheese
- 1 teaspoon lemon zest
- 1/4 cup kirsch
- 1 cup cherries, pitted and chopped
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a saucepan, melt the butter and mix in the sugar until combined.
- Add the eggs one by one, mixing well after each addition.
- Stir in cocoa powder, flour, salt, and vanilla extract until smooth.
- In a separate bowl, mix ricotta cheese, lemon zest, and kirsch until smooth.
- Pour half of the brownie batter into the prepared baking dish.
- Spoon dollops of the ricotta mixture over the brownie layer.
- Pour the remaining brownie batter on top and swirl with a knife.
- Top with chopped cherries.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before slicing and serving.
