- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes
- 4 cups spinach
- 2 cups kale, chopped
- 1/2 cup parsley, chopped
- 1/2 cup cilantro, chopped
- 1 can (14 oz) diced tomatoes
- 4 eggs
- Salt and pepper to taste
- Heat olive oil in a skillet over medium heat. Add onion and sauté until translucent.
- Add garlic, cumin, smoked paprika, and red pepper flakes; cook for 1 minute.
- Add spinach, kale, parsley, and cilantro; stir until wilted.
- Pour in diced tomatoes and simmer for 5 minutes.
- Make wells in the mixture and crack an egg into each well.
- Cover and cook until eggs are set to your liking.
- Season with salt and pepper, then serve.

- This dish is best served hot with crusty bread for dipping.
