- 250 g butter
- 250 g sugar
- 1 packet vanilla sugar
- 4 eggs
- 300 g flour
- 2 tsp baking powder
- 50 g cocoa powder
- 400 g cherries
- 200 g dark chocolate
- 250 g cream
- Preheat the oven to 180°C (350°F).
- In a bowl, cream the butter, sugar, and vanilla sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Sift in the flour, baking powder, and cocoa powder; combine to form a batter.
- Spread half the batter on a baking tray lined with parchment paper.
- Drain the cherries and scatter them over the batter.
- Spread the remaining batter over the cherries.
- Bake for about 30-35 minutes until a toothpick comes out clean.
- Let cool, then prepare the frosting by melting the chocolate with cream.
- Spread the chocolate frosting over the cooled cookies and cut into squares.
Notes
- Ensure cherries are well-drained to prevent soggy cookies.
- Let the cookies cool completely before adding frosting.
