- 1 tablespoon vinegar

- 1 cup fresh spinach
- ½ cup sliced tomatoes
- 4 slices cheese (optional)
- Preheat your oven to 350°F (175°C).
- In a pot, bring water to a simmer and add vinegar.
- Crack eggs into the simmering water, poaching them for about 3-4 minutes.
- Meanwhile, slice the croissants and place them on a baking sheet.
- Layer spinach, tomatoes, and cheese on the bottom half of each croissant.
- Once the eggs are cooked, place one poached egg on each sandwich.
- Season with salt and pepper, then cover with the top half of the croissant.
- Bake in the oven for about 5 minutes until warm.
Notes
- For a richer flavor, add herbs like chives or dill.
- These sandwiches can be assembled ahead of time and baked just before serving.
