- 2 medium beets
- 1 medium onion
- 1 medium carrot
- 2 cloves garlic
- 4 cups vegetable broth
- 1 medium potato
- 1 tablespoon vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 tablespoon dill
- 1 cup sour cream
- Peel and grate the beets, onion, and carrot.
- In a large pot, sauté the onion and carrot until soft.
- Add the beets and garlic, cooking for another 5 minutes.
- Pour in the vegetable broth and add diced potatoes.
- Stir in vinegar and sugar, and season with salt and pepper.
- Simmer for about 30 minutes until the vegetables are tender.
- Serve hot with a dollop of sour cream and sprinkle with dill.
Notes
- For a meatier version, add cooked beef or pork.
- Can be enjoyed hot or cold.
- Best served with a slice of rye bread.
