Borschtsch is a traditional Eastern European soup made with beets, giving it a distinctive red color.

Ingredients

  • 2 medium beets
  • 1 medium onion
  • 1 medium carrot
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 medium potato
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 tablespoon dill
  • 1 cup sour cream

Instructions

  1. Peel and grate the beets, onion, and carrot.
  2. In a large pot, sauté the onion and carrot until soft.
  3. Add the beets and garlic, cooking for another 5 minutes.
  4. Pour in the vegetable broth and add diced potatoes.
  5. Stir in vinegar and sugar, and season with salt and pepper.
  6. Simmer for about 30 minutes until the vegetables are tender.
  7. Serve hot with a dollop of sour cream and sprinkle with dill.

Notes

  • For a meatier version, add cooked beef or pork.
  • Can be enjoyed hot or cold.
  • Best served with a slice of rye bread.
