- 1 head cauliflower
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 1 lemon, juiced
- 2 tablespoons fresh parsley, chopped
- Preheat oven to 400°F (200°C).
- Wash and cut the cauliflower into florets.
- In a large bowl, combine olive oil, cumin, coriander, turmeric, chili powder, salt, and black pepper.
- Add the cauliflower florets to the bowl and toss until well coated.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and golden.
- Remove from the oven and toss with minced garlic and lemon juice.
- Sprinkle with chopped parsley before serving.
Notes
- For a spicier dish, add more chili powder.
- This recipe can be served warm or at room temperature.
