- 1 head cauliflower
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and place in a large bowl.
- Add olive oil, cumin, coriander, turmeric, cayenne pepper, and salt. Toss until the cauliflower is well coated.
- Spread the cauliflower on a baking sheet in a single layer.
- Roast in the oven for about 25 minutes, or until golden and tender.
- Remove from the oven and drizzle with lemon juice.
- Garnish with chopped parsley before serving.
Notes
- This dish pairs well with rice or flatbreads.
- For a spicier version, increase the amount of cayenne pepper.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
