Delicious Italian rice balls filled with mozzarella and ham, perfect as an appetizer or snack.

- 2 cups Arborio rice
- 4 cups chicken broth
- 1 cup grated Parmesan cheese
- 1 cup mozzarella cheese, cubed
- 1 cup cooked ham, diced
- 1 onion, finely chopped
- 2 eggs
- 1 cup breadcrumbs
- Oil for frying
- In a pot, heat broth and keep warm.
- In a large pan, sauté onion until translucent. Add Arborio rice and stir for a few minutes.
- Add warmed broth gradually, stirring frequently until absorbed. Cook until rice is tender.
- Remove from heat, stir in Parmesan, and let cool.
- Once cool, mix in diced ham and mozzarella.
- Form rice mixture into balls and dip in beaten eggs, then roll in breadcrumbs.
- Fry in hot oil until golden brown. Drain on paper towels.
- Serve hot!
Notes
- For a crispier texture, double coat the arancini in eggs and breadcrumbs.
- Make sure to chill the risotto mixture before forming balls for easy handling.
